Frugal Dinner Meal Bowl Ideas

A lot of my cooking is just throwing items together in a dinner bowl (size of a plate, but a bowl). It usually consists of 1/4 protein, 1/4 – 1/3 carbs, and the rest veggie, salad and/or fruit. And usually a dollop of condiment (like pesto + mayo mix or chili sauce + mayo) – especially if fish or root vegetables are in present.

Here are a few of my favorite cheap or frugal dinner meal bowl ideas:

  • Rice, beef, roasted root veggies, salad and spicy marinated cucumbers
  • Salmon, rice, roasted kabocha squash, some type of green veggie with pesto+mayo dollop
  • Cilantro-lime rice, ranchero pinto beans, steak or chicken, salad, bell peppers, roasted corn and onions, side of lime and avocado. Drizzle with sour cream (thinned down with milk)
  • Pasta, beef or chicken or Italian sausage, any mix of veggies + kale, drizzle with olive oil (not big on red sauce – if so it’s lightly used) and lots of seasoning

I think my solid tip is the use of seasoning. I love my seasoning – it elevates any dish. Also meal bowl ideas is the easiest way to allevitate the “what’s for dinner?” question because you just throw together what every is available.

I really like roasted chickpeas in my bowls. They’re crunchy and have protein and fiber. I also really like roasted cauliflower and broccoli.

@govworkerfi I love roasted veggies all around! I can never get my chickpeas roasted just right. Had some at a restaurant the other day that came out perfect. Beginning to think they fry them.
